10 “Abuela Emilia” potatoes
1/4 white onion
2 tablespoons olive oil
1/2 teaspoon paprika
Salt and pepper
1. Peel and chop the potatoes into cubes. Saute in olive oil at medium heat till they are translucent. Remove from pan.
2. On the same pan saute the onion finely chopped in olive oil until translucent and soft.
3. Put back in the pan the potatoes and spread across and uniformly through the entire pan (this one can be about 15 diameter.)
4. Scramble eggs with paprika, salt and pepper to taste and pour the mixture into the pan.
5.Cover the pan and cook until it is compact, about 12-15 minutes. Unmold and serve
